The best way to save your top tier is to place it in the freezer immediately, allowing for the frosting to harden a bit so that it doesn’t stick to the plastic wrap. Then cover it in plastic wrap and put it in a sealed hair tight bag and back into the freezer. Be aware that no matter how tight you wrap it, after a year in the freezer, your cake will most likely be a bit stale or freezer burned. That is why a lot of couples have now decided to purchase a cake identical to the top tier of their wedding cake for their 1 year anniversary. These cakes can still have sentimental value for a couple, and most definitely a fresher taste.
